Chili & Cornbread

This post originally published on a previously-owned blog and was imported here to simplify my life. My family eats much healthier than this nowadays, but I include this post for memories and history. I hope you enjoy the content!

I renamed this to be called Marvelous Beef Chili.  I’m a chili lover and am absolutely saving this recipe forever.  That’s all.

This cornbread was very moist.  Surprisingly.  It was the first recipe I cooked out of the A Taste of Oregon cookbook we I received for our wedding and, in Mike’s words, “didn’t taste like any cornbread we’d ever had before.”  It’s sweeter than most but the most refreshing part of it was that it didn’t taste like you were putting a spoonful of dry bread crumbs into your mouth.  Yes, I’m saving this one, too.  Taste of Oregon, you are 1 and 0!

  1. On the other hand, the chili recipe sounds delicious. The fact that it can be made in the slow cooker/crock pot makes it even more appealing.

  2. Oops. I forgot to sign my \”anonymous\” comment above. And the first one didn't go through, so I'll make that comment here, also. Sorry, but being my mother's (your great grandmother's) daughter, I won't be putting sugar in cornbread. Not gonna happen!Neva

Even Gram's cornbread dressing recipe calls for a bit of sugar in the cornbread. =) The usual southern way (baked in a cast iron skillet and covered with red beans) does not contain sugar, but many yummy recipes do, and I personally prefer it – seems to cut the sharpness of the cornmeal a bit.

  4. Now you've changed my mind about cornbread! I also always thought that it was just a mess of dried crumbs, but I'm glad that there's a recipe for the opposite!

  7. You just can't go wrong with this combination. Love it. I'm a HUGE chili fan and of course, I gotta have a moist and sweet cornbread. Looks great!!
