gluten-free breakfast egg strata

My husband stumbled out of bed this morning, only to find that he couldn’t go as far as he wanted down the hallway.  A chair was blocking his way.  It’s my inherited way to leave notes.  A valuable lesson from my mother – make it so they have to walk around the chair or they might never see it!

Basically, it gave instructions of sticking this dish {that I prepped last night} into the oven properly.  I was up for hours later than he was, and I wasn’t going to get up to stick it in an hour before we were going to eat.  🙂  Uh uh, no way.  Sleeping in is one of the best things in the entire world!

By the way, it may sound like I love every thing I ever make, but trust me.  I’m just sharing recipes worth sharing.  I made some enchiladas out of this same cookbook a couple weeks ago and they were no bueno… Needless to say, we really liked this dish.  It was quite rich and so I’d serve smaller portions with other items if you’re cooking for a breakfast group, but it was great.  I even had “leftovers” for lunch.  Can they be called leftovers when it’s just a few hours later??
